Coumarin is a fragrant organic chemical compound in the benzopyrone chemical class, which is a colorless crystalline substance in its standard state. It is a natural substance found in many plants.
Synthetic coumarin is made with the Perkins-chen synthesis of salicylic acid and acetic anhydride. Only China and India are the two most important producers in the world and China accounts for more than 70% of global production.
